Fresh Foods Manager
　　We interviewed the manager of fresh food, Ms. Fei-wen Hsu, who is a professional technician and interested in learning knowledge of fresh food. She introduced the six major divisions in fresh food department to us: division of aquatic products, division of bakery, division of vegetables, division of fruits, division of meat, and division of cooked food.

The food in RT Mart is under careful examination

　　Ms. Fei-wen Hsu mentioned that the food in RT Mart is under careful examination. For example, the examination results of vegetables that RT Mart chooses must be acceptable and on the way of delivery to RT Mart, the freshness must be maintained. In addition, the original flexibility and freshness have to be maintained when processing.

　　If the expiration time of food displayed is less than one-third of it, the food will be off the shelf to maintain the best quality. Drinks like milk and juice are well preserved in refrigerators and each fresh food that RT Mart sells must undertake two examinations before it is loaded on the rack.

RT Mart adopts the purchasing strategy of making a contract with the place of production
　　Ms. Hsu was very proud of RT Mart’s purchasing procedures in buying fresh vegetables. RT Mart adopts the purchasing strategy of making a contract with the place of production. And the policy of the contract is “once the products pass the examination, RT Mart will buy all of them” to maintain the low prices and freshness of vegetables. Meat and seafood are cut, washed, and preserved by professional staffs and will be unloaded before expiration date.

　　Cooked food area can be divided into two parts: materials and delicacies. Food hygiene procedures have been undertaken to guarantee the quality of food. RT Mart will not sell their food staying to next day and everything will be sold by a clearance sale after 7:30 pm. Ms. Fei-wen Hsu mentioned her special experience on typhoon days that almost everything in cooked food area and bakery will be sold out since more customers will shop in warehouses.

We felt the temperature in freezing area and refrigeration area
　　We like the cakes and bread in the bakery area a lot. Ms. Hsu and Ms. He took us to refrigeration area and freezing area, where the temperatures are -18 ℃ and 0~-7 ℃. Wow~ it is really freezing. Many bread-making materials, such as butter, milk, and flour are preserved here.
